Wild Blueberry Sourdough Muffins.

Makes 10-12 Muffins

Ingredients:

  • 1 cup wholemeal spelt flour

  • 1 tsp baking soda

  • 1 tsp cinnamon

  • ¼ cup honey

  • 1 cup Mt Wilderberry Wild Blueberries

  • 1 cup sourdough starter

  • 1 pasture raised egg

  • ¼ cup organic butter, melted

Instructions:

  1. Preheat your oven to 190c and prepare a muffin tin.

  2. In a large mixing bowl, combine the spelt flour, baking soda, and cinnamon.

  3. In a separate bowl, beat the egg and then add the sourdough starter, melted butter, honey, and vanilla extract. Stir well until all the wet ingredients are thoroughly combined.

  4. Pour the wet mixture into the dry mixture and gently fold them together.

  5. Fold in the blueberries. Be sure not to overmix, as this can cause the muffins to become tough.

  6. Spoon the muffin batter into the prepared muffin tin, filling each cup about two-thirds full.

  7. Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until a toothpick or skewer inserted into the center of a muffin comes out clean.

  8. Once done, remove the muffins from the oven and allow them to cool for a few minutes.

  9. Enjoy!
