Raw honey offers a myriad of health benefits due to its natural, unprocessed state. It is a potent source of antioxidants, which help combat oxidative stress and support a strong immune system. Ingredients:

For the Crust:

  • 1 cup pitted Medjool dates

  • 1 cup unsweetened shredded coconut

  • 1/2 cup raw macadamias

  • 2 tablespoons hemp seeds

  • A pinch of sea salt

For the Filling:

  • 2 cups raw macadamias, soaked in water for at least 4 hours or overnight

  • 1/2 cup coconut cream

  • 1/2 cup fresh lime juice (about 4-5 limes)

  • Zest of 2 limes

  • 1/4 cup EmbodyBee Sacred Salty Hemp Crunch

  • 2 tablespoons hemp seeds

For the Topping (Optional):

  • Dried lime slices and hemp seeds

Method:

  1. In a food processor, combine the pitted Medjool dates, unsweetened shredded coconut, raw macadamias, hemp seeds, and sea salt. Process the mixture until it forms a sticky consistency that holds together when pressed between your fingers.

  2. Press the mixture evenly into the bottom of lined or silicone muffin moulds. Place in the freezer to set.

  3. In your food processor, combine the soaked macadamias, coconut cream, fresh lime juice, lime zest, EmbodyBee Sacred Salty Hemp Crunch, and hemp seeds. Blend on high until the mixture is smooth and creamy. You may need to scrape down the sides of the blender to ensure all ingredients are well combined.

  4. Pour the filling over the prepared crusts in the muffin moulds and spread it evenly.

  5. If desired, decorate the top with dried lime slices and additional hemp seeds.

  6. Place the raw cheesecakes in the freezer for at least 4 hours, or until it's firm and set.
