Turmeric Mayonnaise.

Hemp seed oil is such an incredible cold-pressed oil with a multitude of health benefits. Rich in essential fatty acids, particularly omega-3’s which, unless we are consuming fish 3 times per week, we tend to miss out in the amounts our body requires. Hemp seed oil is rich in anti-inflammatory properties, which can alleviate symptoms of conditions like arthritis and improve overall joint health. Its abundance of antioxidants supports the body in fighting off free radicals, potentially reducing the risk of chronic diseases and promoting healthy aging. Hemp seed oil is an excellent source of plant-based omega 3’s and can be a valuable addition to vegetarian and vegan diets. Moreover, it's renowned for its impact on skin health, as it may alleviate conditions like eczema and acne. Its nutty flavour and versatility in cooking make it perfect for this recipe, and its potential health benefits make it a well-rounded addition to your everyday life.

Ingredients:

  • 1 large egg, at room temperature

  • 1 tablespoon Dijon mustard

  • 1 tablespoon apple cider vinegar

  • 1 teaspoon of ground turmeric

  • Pinch of salt + pepper

  • 1 cup hemp seed oil

Method:

  1. Make sure the egg is at room temperature as this helps with emulsification. You can take it out of the refrigerator and let it sit for about 30 minutes.

  2. In a food processor, add the egg, Dijon mustard, apple cider vinegar, turmeric, salt, and pepper to aid in absorption of the turmeric. Blend the ingredients for about 20-30 seconds until they are well combined.

  3. With the food processor running, start to add the hemp seed oil very slowly in a thin, steady stream. You can do this by pouring the oil in through the feed tube of the processor or by adding it in small drops if you're using a blender. The key to making mayonnaise is to add the oil very gradually to allow the mixture to emulsify and thicken properly.

  4. Continue adding the oil until you've used it all, and the mayonnaise reaches your desired consistency. It should be thick and creamy.

  5. Enjoy! I love dipping vegetables into this, having it with boiled or scrambled eggs, or serving it alongside any homemade fritter.
