Honey Smashed Potatoes + Beetroot Hummus.

For the Honey Smashed Potatoes:

For the Beetroot Hummus:

  • 2 medium-sized beetroots, cooked and peeled

  • 400g chickpeas, drained and rinsed

  • 2 cloves garlic, minced

  • 3 tablespoons tahini

  • Juice of 1 lemon

  • 1/4 cup extra virgin olive oil

  • Salt and pepper to taste

Method:

  1. Preheat your oven to 200c.

  2. Wash the potatoes and place them in a large pot of salted water. Bring the water to a boil and cook the potatoes until they are fork-tender, about 15-20 minutes. Drain the potatoes and let them cool for a few minutes.

  3. While the potatoes are cooling, prepare the beetroot hummus. In a food processor, combine the cooked and peeled beetroots, chickpeas, minced garlic, tahini, lemon juice, olive oil, salt, and pepper. Blend until smooth.

  4. In a small bowl, mix together the honey, extra virgin olive oil, tamari and honey for the potato drizzle.

  5. Place the cooked and slightly cooled potatoes on a baking tray. Use the bottom of a glass or a fork to gently smash each potato.

  6. Drizzle the honey-tamari-olive oil mixture over the smashed potatoes.

  7. Roast the potatoes in the preheated oven for about 20-25 minutes or until they are crispy and golden brown.

  8. Once the potatoes are crispy and cooked to your liking, remove them from the oven.

  9. To serve, spread a generous portion of beetroot hummus on a plate and top with the honey smashed potatoes.
