Homemade Barbecue Chicken Tortillas

These coconut flour tortillas are the perfect vessel for any fillings of your choice! They’re a rich source of gentle fibre, having a calming affect on your nervous system due its ability to stabilise blood sugar.

Serves 2

Ingredients:

  • 1/4 cup coconut flour

  • 2 tablespoons psyllium husk

  • 1 cup filtered water

  • 3 preservative free, organic chicken sausages

  • 1/4 red cabbage, shredded

  • 1/2 red capsicum, thinly sliced

  • 1/2 brown onion, thinly sliced

  • GevityRx Better Belly BBQ Sauce, to serve

  • Mixed leafy greens, to serve

Method:

  • In a small bowl, combine the coconut flour, psyllium husk and water, stirring until well combined.

  • Allow to thicken for 5-10 minutes.

  • Cut the dough into 4 even pieces and flatten between two silicone baking mats or baking paper, until you create a thin dough.

  • Place a generous amount of extra virgin olive oil into a large pan over a medium heat, and cook the tortillas on each side for about 2-3 minutes.

  • Transfer the tortillas to a plate, and cover with a tea-towel to keep them warm.

  • Add more oil to the pan if required, and cook your cabbage, capsicum, onion and chicken sausages, cooking for 10-15 minutes until the sausages are completely cooked through.

  • Serve the vegetable and sausage mixture inside the tortillas, and top with a generous dollop of GevityRx Better Belly BBQ Sauce, and enjoy!
