Healing Kitchari

Kitchari, also called Khichdi, is a traditional Ayurvedic healing dish full of gentle, nourishing ingredients that are easy on the digestive system and utilised to strengthen vital force.

Agni, or digestive fire, is considered of utmost importance in Ayurvedic medicine; strong agni means we are able to digest, assimilate, and absorb nutrients from our food. Weak or imbalanced agni means malabsorption and accumulation of ama (natural toxins).

Spices included in this dish, ginger, cumin, coriander and fennel, encourage healthy agni.

Serves 2

Ingredients:

  • 1-2 tablespoons grass fed, organic ghee

  • 2-inch piece fresh ginger, minced or grated

  • 2 teaspoons ground turmeric

  • 1 teaspoon ground cumin

  • 1 teaspoon ground coriander

  • 1 teaspoon ground fenugreek

  • 1/2 cup split mung beans

  • 1/2 cup brown basmati rice

  • 4-5 cups organic bone broth or vegetable broth

  • ½ teaspoon salt

  • Bunch of kale, chopped

  • Lemon or lime juice, for garnish

Method:

  • In a medium pot, heat the ghee on low heat and add in the spices

  • Toast them lightly until fragrant, stirring frequently to avoid burning.

  • Add the mung beans, rice, broth, and salt. Bring to a boil.

  • Reduce heat, cover, and allow to simmer for 25-30 minutes until the broth has been absorbed.

  • Add the kale in the last 5-10 minutes of cooking to keep it fresh and vibrant.

  • Serve with a squeeze of lemon or lime juice
