Simple Pickled Red Onions.

Method:

  1. Thinly slice the red onion.

  2. In a small saucepan, combine the apple cider vinegar, water, honey, and Celtic sea salt.

  3. Heat the mixture over medium heat, stirring occasionally, until the honey and salt are fully dissolved. Remove from heat.

  4. Place the sliced onions in a clean, heatproof jar or container.

  5. Pour the hot brine over the onions, ensuring they are fully submerged. Let the mixture cool to room temperature.

  6. Once cooled, cover the jar with a lid and refrigerate. The onions will be ready to eat in about an hour, but taste even better after a few hours or overnight. They can be stored in the refrigerator for up to 2 weeks.
