Wild Blueberry Pie.

Wild blueberries are nature's little jewels, offering a plethora of nutritional benefits.

Ingredients:

Crust:

  • 2 cups almond flour

  • 1/4 cup coconut flour

  • 1/4 teaspoon salt

  • 1/4 cup coconut oil, melted

  • 1 egg

Blueberry Filling:

Method:

  1. Preheat your oven to 180°C.

  2. In a mixing bowl, combine the almond flour, coconut flour, and salt for the crust. Mix well.

  3. Add the melted coconut oil and egg to the dry ingredients. Mix until a dough forms. If the dough is too dry, you can add a little more melted coconut oil or water, 1 tablespoon at a time, until the dough comes together.

  4. Press the dough evenly into a 20cm pie pan, covering the bottom and sides. Use your fingers or the back of a spoon to smooth out the crust. Prick the crust with a fork to prevent it from puffing up during baking.

  5. Take a small piece of the crust dough and roll it between your hands to create a sausage-like shape, about 1/2 cm thick. Carefully shape the rolled dough into a heart shape, using your fingers to press and mould it. Set aside.

  6. Place the crust in the refrigerator while you prepare the filling.

  7. In a separate bowl, gently toss the wild blueberries with honey, lemon juice, and arrowroot powder (or tapioca flour). Make sure the blueberries are well coated.

  8. Pour the blueberry mixture into the prepared crust, spreading it out evenly.

  9. Place your heart shape freely on-top of the pie, and bake in the preheated oven for about 30-35 minutes, or until the crust is golden brown and the blueberry filling is bubbling.

  10. Once baked, remove the pie from the oven and let it cool for at least 30 minutes before slicing. This allows the filling to set.

  11. Enjoy your delicious pie either as is, or alongside a dollop of cream or ice cream.
