Gut Loving Marshmallows.

These gut loving gummies are perfect to nourish your inner child at all ages; being suitable for children 6 months + if you have started solids with your little one.
Gelatine creates the base of this recipe, derived from collagen-rich animal sources, can aid in repairing and strengthening the gut lining, making it beneficial for those with intestinal permeability or “leaky gut”. It also has the ability to support the synthesis of digestive enzymes, boosting nutrient absorption and aiding in digestion.
The addition of raw honey possesses prebiotic properties, acting as nourishment for the beneficial bacteria residing in our intestines. This promotes a healthy gut flora balance, leading to improved digestion, enhanced nutrient absorption, and a boosted immune system.

Ingredients:

  • 3 tablespoons grass-fed gelatine

  • 1 cup cold water (divided)

  • 1 cup honey

  • 1 teaspoon vanilla extract (optional)

  • Powdered sugar (for dusting)

Method:

  1. Prepare a square baking pan or silicone mould. Grease with coconut oil or dust with powdered sugar.

  2. In a mixing bowl, combine 1/2 cup of cold water with the gelatin. Allow it to bloom for 5-10 minutes. This will give the gelatine a chance to absorb the water and swell.

  3. In a saucepan, heat the honey over medium heat until a light steam comes off the top (110c if you have a thermometer), but not to the stage of boiling or simmering.

  4. Once the honey reaches the desired temperature, remove it from the heat. Slowly pour it into the bloomed gelatin while continuously whisking to avoid lumps. Add vanilla extract if desired.

  5. Using a stand mixer or hand mixer, whip the mixture on medium-high speed until it becomes thick and glossy. This will take about 10-15 minutes.

  6. Pour the marshmallow mixture into the prepared pan, and allow the marshmallows to set at room temperature for at least 4 hours, or overnight for best results.

  7. Once set, place it on a cutting board and dust the top with powdered sugar or arrowroot powder. Cut the marshmallows into squares using a sharp knife.
